For Baked Karanji use a 9 inch pie dough for the the outer cover,cut into big circles fill the filling of coconut and sugar/jaggery in it and make a karanji and bake it as usual at 450 for 9/10 mins
For Chirota use a fillo pastry dough roll it into a a cylinder cut app 1 inch parts flaten an bit and round it like chirotas and pour hard syrup(goli band pak) on each one for perfect chirota one can add kesar to the pak.
For Mathri with a twist cut fresh plain flour tortilla or wheat tortilla in strips,fry them sprinkle with chat masala mixed with kasuri methi and your fresh mathri is ready!!
For Besan Laddoo do not make ghee just fry the besan in unsalted butter,just microwave for 2 minutes app 5/6 times stirring in between and the besan is easily fried,just add normal sugar no need for the powdered one!!

Aromatherapy
No need for me to go to expensive spas for an aroma therapy,One sniff of my saffron bottle and one sniff of an orange is enough to cheer my mood!!and frankly my kitchen gives out lot of different pleasant aromas!!My sons have learned to recognise foods thru their aroma!!:)

HERBS
I just cannot cook without using herbs!!Basil,Chives,Oregano and Cilantro.Corriander leaves being my all time fav herb,Its smells works as an aroma therapy for me.Preserving herbs is also a skill............One day I would have my herb garden!!

The best feeling is to see your kitchen pantry and your fridge full,it freaks me out wnenever either of them feels empty. I guess it has a medical term "foodophobia" :)but I dont forget to thank god for a full(seldom overflowing:)) fridge, resulting in a plate full of food on the table for my family!
